Ingredients
- 8.8 oz dry biscuits
- 5.3 oz dark chocolate
- 1/4 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1/3 cup coffee
- 2 tbsps liqueur (San Marzano or rum)
- 7 tbsps butter (melted)
- to taste powdered sugar (for decoration)
- 3 tbsps hazelnuts (crumbs)

- 1 Pot bain-marie
Steps
The first thing to do is to coarsely crumble the biscuits.
Melt the dark chocolate in a bain-marie or in the microwave if you prefer.
Add the melted butter to the chocolate.
Add the coffee and San Marzano liqueur. If you prefer, you can also replace the coffee with milk in the same amount, but I assure you the taste changes significantly.
Add the sugar.
Add the unsweetened cocoa.
Add the cookies.
Add the hazelnut crumbs and mix well until everything is combined.
Gently pour the mixture onto a large sheet of parchment paper. Use a spatula to form a cylinder.
Wrap it like a candy.
Tie the ends with string and let it set in the fridge for at least 3 hours. It’s best if prepared in the evening and left to set overnight.
Massage the salami with plenty of powdered sugar.
Slice and serve.
