For a more intense flavor, you can use saffron threads instead of the sachet.
If you want a thicker cream, you can add a bit of culinary cream or mascarpone. I preferred to avoid it even because it was creamy enough.

Ingredients
- 12 oz orecchiette (fresh)
- 2 cups zucchini
- 1 sachet saffron
- to taste salt
- 1 clove garlic
- 2 tbsps extra virgin olive oil
- 1 1/4 cups water (boiling)
- 1/3 cup grated Parmesan cheese
- 5 oz mozzarella
- 2 knobs butter

Steps
The first thing to do is to slice the zucchini thinly.
Heat the olive oil with a clove of garlic in a pan.
Add the zucchini.
Salt to taste.
After 5 minutes, remove the garlic clove.
Put the zucchini in a bowl and in the same pan heat two knobs of butter.
Add the boiling water that we will have heated in the meantime and the saffron sachet.
Stir and add the fresh raw orecchiette.
Risotto the orecchiette for a few minutes and add the zucchini.
Continue cooking and a few minutes before finishing, add the mozzarella in pieces.
Toss. When the mozzarella is well melted, turn off the heat and add the grated Parmesan cheese.
