Ingredients
- 2 eggplants
- 2 eggs
- 3 tablespoons Parmesan cheese
- to taste salt
- 1 pinch pepper
- 2 tablespoons cornstarch
- 4 tablespoons breadcrumbs
- to taste extra virgin olive oil
Steps
The first thing to do is to remove the skin from the eggplants and put them in the oven with some olive oil, or if you prefer, boil them in water until they become soft
Thoroughly mash the eggplants until they become a puree
Add the parsley, garlic
the Parmesan cheese
and the eggs.
A pinch of pepper
Mix well and add the cornstarch
the breadcrumbs
On the work surface, pour more breadcrumbs and start shaping our eggplant sticks
Coat them in breadcrumbs and continue until you finish the mixture
Place the sticks on a baking sheet with parchment paper, pour oil both underneath and on top of the sticks, and bake in a preheated oven at 350°F for 25 minutes
