Crispy Parmesan Potatoes

Crispy Parmesan Potatoes are a tasty and flavorful side dish, perfect to accompany meat or fish main courses. They are easy to prepare and require few ingredients: potatoes, grated Parmesan, extra virgin olive oil, salt, and pepper. There are several variations of this recipe: the potatoes can be cut into cubes, wedges, or slices. You can also add other ingredients, such as breadcrumbs, herbs, or spices. But the really special thing about this side dish is the cheesy flavor at the base of the potato, which, I assure you, will make you savor one potato after another. Let’s say the cut and choice of potato is up to you. I have used those of medium size suitable for all types of recipes, but if you want, you can use smaller ones like baby potatoes or leave the skin on. I removed it because the potatoes I used were not suitable for cooking with the skin on. Try them because they are delicious.

Ingredients

  • 1.1 lbs potatoes
  • to taste salt
  • 3 tbsp extra virgin olive oil
  • to taste oregano
  • 1 pinch pepper
  • 5.3 oz Grana Padano DOP

Steps

  • The first thing to do is peel the potatoes and cut them in half.

  • With a knife, make several cuts on the surface.

  • Place the potatoes in a bowl and salt them.

  • Add pepper and extra virgin olive oil.

  • Add oregano and mix well.

  • In another bowl, mix the Parmesan with extra virgin olive oil.

  • Mix well until the cheese has absorbed all the extra virgin olive oil.

  • Spread the mixture in the baking dish.

  • Start arranging the potatoes

  • Place them well next to each other and not overlapping. Bake in a preheated convection oven at 356°F for 30 minutes. You will see a delicious crust form under the potato that will make everything very, very inviting.
