Today I want to share with you a truly irresistible first course, ORECCHIETTE WITH THREE TOMATOES. A celebration of tomatoes and super stringy mozzarella. To prepare this first course I preferred, as a good Apulian, the legendary fresh orecchiette, strictly handmade, but if you prefer, you can enjoy this dish with any pasta format. Tomato season is summer, and it can be harvested from mid-June until the end of September!

Ingredients
- 11.3 oz orecchiette
- 10 Pachino tomatoes
- 10 San Marzano tomatoes
- 8.8 oz peeled tomatoes
- 30 Parmigiano Reggiano DOP
- 3 tbsp extra virgin olive oil
- 1 clove garlic
- to taste salt
- 7 oz mozzarella
- to taste basil

Steps
The first thing to do is to make homemade Apulian orecchiette. You can find the recipe among the ingredients. Or if you prefer, buy them ready-made.
Cut the Pachino tomatoes into pieces
and the San Marzano tomatoes
In a pan, heat the oil with the garlic clove.
Add the tomatoes and salt
Add some basil
Add the peeled tomatoes and cook for 20 minutes.
Use the immersion blender to reduce everything to a cream
Boil the orecchiette in salted water for 5 minutes
Drain the orecchiette and continue cooking in the sauce for another 6 minutes
Stir in the Parmesan
and mozzarella
Our creamed orecchiette are ready to be enjoyed

How should tomatoes be stored?
Ripe tomatoes should be stored at room temperature, but if for some reason you must store them in the refrigerator, remember to take them out at least an hour before consuming.
