Parisian Sicilian Dunking Cookies

Parisian Sicilian Dunking Cookies are a typical Sicilian pastry specialty, famous for their crumbly texture and ability to perfectly absorb milk or coffee, turning into a unique tasting experience. These cookies, with their elongated and slightly curved shape, are characterized by a simple dough based on flour, sugar, eggs, and lard (or butter), often enriched with lemon or orange zest for a touch of freshness. I have replaced the butter with sunflower oil and the lemon and orange with vanilla extract.
The origin of the name “Parisian” is shrouded in mystery. Although the name might suggest a French origin, these cookies are authentically Sicilian and have no connection to the French capital. Some theories suggest that the name may derive from the elongated shape of the cookies, reminiscent of a cigar, a product very common in Paris at the time these cookies appeared.

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 1/8 cups sugar
  • 3 eggs (medium)
  • 1 tbsp baking powder
  • 6 tbsp sunflower oil
  • 1 tsp vanilla extract
  • 1/4 cup cake flour
  • 3 tbsp unsweetened cocoa powder

Steps

  • Combine the flour with the sugar in a bowl

  • The packet of baking powder

  • the eggs

  • The sunflower oil

  • The vanilla extract

  • work it in the bowl

  • until you get a smooth and homogeneous dough

  • which we will divide into two equal parts.

  • to one part we will add the cake flour

  • work until you get this result

  • to the other half we will add the cocoa

  • and work until you get this result

  • At this point form two logs, one light and one dark.

  • Combine them

  • by rolling.

  • Do the same with the other two doughs and braid them

  • Place them on baking parchment and bake in a preheated static oven at 350°F for 30 minutes

  • Wait a few minutes after baking and cut the logs diagonally.

  • Our Parisians are ready to be dunked in a cup of milk for breakfast.
