Ingredients

  • 3 cups all-purpose flour
  • 2 eggs (medium)
  • 1/3 cup sunflower seed oil
  • 6 tablespoons powdered sugar
  • 2 lemons (zest of organic lemons)
  • 2 lemons (juice)
  • 1 pinch salt
  • as needed powdered sugar (to coat before baking)

Steps

  • Place the eggs in a bowl

  • Add the powdered sugar

  • Add the lemon zest

  • Add the lemon juice

  • Add the sunflower seed oil

  • Add the flour along with the baking powder

  • Work the mixture until you get a smooth and homogeneous ball, then let it rest in the fridge for 10 minutes.

  • Take a piece of dough and form a small ball

  • Roll the balls first in granulated sugar

  • Then in powdered sugar

  • Place the cookies on parchment paper and bake in a preheated oven at 356°F for a maximum of 13 minutes.
