Soft Cracked Pumpkin Cookies

And let it be pumpkin!!! We’re kicking off the pumpkin season with these Soft Cracked Pumpkin Cookies that practically melt in your mouth. I’ve been wanting to make these super soft treats for a long time, usually I always prepare them with a lemon flavor, i.e., the Crumbly and Quick Lemon Treats that are good all year round, and I must say that even with pumpkin they are really soft and delicious. I first cooked the pumpkin almost steamed, and it cooked in just a few minutes. With pumpkin, you can really make so many sweet and savory recipes; it’s a truly special ingredient. It has many properties and very few calories. Rich in water, carotene, vitamin A, C, and B1. As for cooking the pumpkin, I assure you that as I’ve described, it’s very quick and simple. Regarding cleaning the pumpkin, I recommend doing it with a potato peeler, which is much simpler.

Ingredients

  • 10.5 oz pumpkin
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 2 eggs
  • 6 tablespoons sunflower oil
  • 1/2 cup sugar
  • 4 cups all-purpose flour
  • 1 packet baking powder

Tools

  • 1 Saucepan
  • 1 Baking Tray

Steps

  • First, slice the pumpkin

  • then cube it and place it in a saucepan.

  • Add the two tablespoons of sugar

  • add the water

  • cover with a lid and cook until the pumpkin softens

  • Mash the pumpkin into a puree with a fork.

  • Pour the pumpkin puree into a bowl and add the eggs.

  • Add the sugar

  • add the sunflower oil

  • Mix everything together

  • Add the flour and the baking powder

  • Shape into balls

  • roll them in powdered sugar

  • Continue until the dough is finished and place the cookies on a baking tray lined with parchment paper.

  • Dust with more powdered sugar and bake in a preheated static oven at 392°F for 10 minutes, and our cracked pumpkin cookies are ready to enjoy.
