Super Cheesy Stuffed Spinach Savory Pie

Today, a SUPER CHEESY STUFFED SPINACH SAVORY PIE. I absolutely didn’t feel like going out shopping and the only thing I could do was my usual art of “making do with what I have”. I had frozen spinach available and didn’t feel like sautéed spinach, so I checked the fridge and I had a leftover mozzarella and some eggs about to expire. I assure you that it turned out to be a really amazing savory pie, try it out.

Ingredients

  • 21 oz spinach, frozen
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste salt
  • 4 eggs
  • 1 pinch pepper
  • 1 oz Grana Padano PDO
  • 10.5 oz country-style bread (stale)
  • 1/2 cup milk
  • 7 oz mozzarella
  • to taste breadcrumbs
  • 1 tbsp butter

Tools

  • 1 Baking Dish
  • 1 Container

Steps

  • First, boil the frozen spinach blocks in plenty of water until they dissolve.

  • Drain and sauté in a pan with oil and a clove of garlic.

  • Drain and squeeze the spinach well to eliminate the liquid

  • In a bowl, beat the eggs with salt and Grana cheese.

  • Add the squeezed spinach and stir

  • In a separate bowl, soak the stale bread in milk

  • Add the soaked bread to the spinach and eggs

  • Butter the baking dish and coat it with breadcrumbs. Take half of the mixture and cover the base

  • Add slices of mozzarella

  • Cover with more mixture and sprinkle a bit of Grana on top

  • Add more slices of mozzarella and a drizzle of extra virgin olive oil on top. Bake in a preheated fan oven at 350°F for 30 minutes and serve our spinach savory pie
