The Crispy Flatbread with Potatoes, Tuna, and Olives

Today, an easy savory recipe that saves your dinner, THE CRISPY FLATBREAD WITH POTATOES, TUNA, AND OLIVES. From an idea by Diletta Secco with her crunchy flatbread using different ingredients, a really delicious crispy flatbread emerged. It takes very little to make a dinner. In reality, I had some leftovers to use up, a few leftover olives, and potatoes that were almost sprouting. Therefore, consider this a delicious recycling recipe.

Ingredients

  • 2 potatoes
  • 2 cups cups all-purpose flour
  • 1 ¼ cups cups water
  • 1 tbsp salt
  • to taste extra virgin olive oil
  • 15 green olives
  • 4 oz oz canned tuna in oil (drained)
  • to taste dried oregano
  • 1 tbsp cornmeal (to sprinkle on top)

Tools

  • 1 Oven
  • 1 Baking Pan

Steps

  • The first thing to do is to peel the potatoes and grate them

  • Thoroughly squeeze the potato in a cloth to release its liquid.

  • Pour into a bowl.

  • In another bowl, pour the flour and add 0.63 cups of water from the total ingredients

  • Start kneading

  • Add the potato

  • Continue kneading

  • Add the salt

  • the rest of the water

  • Mix everything well.

  • Spread some extra virgin olive oil on the baking pan

  • Pour the dough

  • Level it well with a spoon and add the olives

  • Drain the tuna well and pour it over the crispy flatbread

  • Proceed with a sprinkle of oregano

  • Cornmeal

  • and finally a generous drizzle of extra virgin olive oil. Then bake in a hot oven at 392°F for 25 minutes or until the crust forms on top. This may vary depending on the oven.
