Ultra Soft Zucchini Savory Pie

Today friends, I want to share with you a truly special recipe that will save dinner and impress your guests, the ULTRA SOFT ZUCCHINI SAVORY PIE. I wanted a savory pie, but not the usual puff pastry one, something softer. This one immediately fulfilled my wish and was greatly appreciated by my friends who I had over for dinner. That’s why I recommend it. Very easy to make with just a simple hand whisk, just have a good mandolin to cut the zucchini as thin as possible. I filled it with mozzarella fiordilatte and Hungarian salami because that’s what I had at home, but even with scamorza and cooked ham or any cold cut you want to add, I assure you the result is a delicious and soft savory pie. Ingredients

  • 2 zucchini (large)
  • 4 eggs (medium)
  • to taste salt
  • to taste pepper
  • 4 leaves mint
  • 1/4 cup sunflower seed oil
  • 1/2 cup milk
  • to taste extra virgin olive oil
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon sugar
  • 1 packet instant yeast for savory preparations
  • 7 oz mozzarella
  • 3.5 oz Hungarian salami (1 thick slice)
  • 1 tablespoon Grana Padano DOP

Tools

  • Hand Whisks
  • 1 Cake Pan

Steps

  • Use a mandolin to slice the zucchini thinly

  • Cut the mozzarella into chunks

  • Chop the Hungarian salami into pieces

  • Place the eggs in a bowl.

  • Add salt

  • Add a bit of pepper.

  • Add the sunflower seed oil.

  • Add the milk.

  • Mix the ingredients well with a whisk.

  • Add salt to the flour

  • and the yeast. Stir well with a spoon.

  • Add the flour to the mixture.

  • Mix until smooth and free of lumps.

  • Season the thinly sliced zucchini with salt, pepper, and olive oil.

  • Mix the zucchini well with the seasoning by hand.

  • Add the zucchini to the mixture

  • Mix well.

  • Pour half of the mixture into a 20 cm cake pan lined with parchment paper.

  • Fill with salami

  • and mozzarella.

  • Pour the other half of the mixture into the cake pan

  • Sprinkle with Grana cheese.

  • Bake in a preheated fan oven at 347°F (175°C) for 40 minutes

  • Let cool slightly and serve the ultra soft zucchini savory pie
