APPLE PANCAKES (Gluten-Free Recipe)

Every week, I experiment with a new fit recipe for my breakfast, which I am pleased to share here on the blog with everyone who loves to indulge in something sweet yet healthy. More than ever these days, I have realized the importance of starting the day with a nutritionally balanced meal for countless reasons I’ve already explained thoroughly and which I invite you to read if you’re new here! These apple pancakes are a great way to indulge without experiencing sugar spikes, as they are sugar-free and, considering they are made with almond flour, they are also gluten-free. They can be prepared in five minutes, but if you’re always in a hurry in the morning, you can prepare them in advance the night before and store them in the fridge to be heated up quickly in the microwave. They will be perfect garnished with agave syrup or a little spread of your choice for a touch of extra sweetness, even as a genuine snack for your kids or a healthy snack to take to the office.

Ingredients

  • 2.8 oz apple (grated)
  • 2.5 oz rolled oats (blended)
  • 1.1 oz almond flour
  • 1 egg (at room temperature)
  • 2.4 fl oz orange juice (fresh)
  • lime zest (untreated)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 1 tablespoon agave syrup (or topping to taste)
  • to taste ground cinnamon

  • 1 Bowl
  • 1 Spoon
  • 1 Lemon grater
  • 1 Crepe pan
  • 1 Spatula

Steps

  • In a large bowl, combine the grated apple with the almond flour.

  • Add the egg, cinnamon, and a pinch of salt.

  • Add the grated lime zest.

  • Add the oat flour previously ground, a pinch of baking soda, and the orange juice.

  • Mix all the ingredients well until you get a homogeneous mixture.

  • Using a spoon, take portions of this mixture and cook the pancakes over low heat for about 2-3 minutes, flattening them slightly, on a well-heated, greased crepe pan, wiping off the excess with a kitchen paper towel.

  • Using a spatula, flip the pancakes and continue cooking for another minute.

  • Stack the pancakes on top of each other to keep them warm and serve with a tablespoon of agave syrup and extra cinnamon to taste.

  • And voilà…the apple pancakes are ready to be enjoyed!

👉 You can store the gluten-free apple pancakes in the fridge inside an airtight container, preferably glass, for 2-3 days at most.
