The basic briosciato dough is one of those special doughs that allow you to express all your creativity in the kitchen using vegan ingredients! In practice, it might seem impossible to create sweets without the usual basic pastry ingredients such as eggs, milk, butter and sugar, but that is far from true! And the result, believe me, is surprisingly delicious! Once you become familiar, for example, with this basic recipe I propose today, credited to a veteran of macrobiotic cooking*, you will be able to create different sweets such as cookies, cakes, loaf cakes and whatever you like! I, for example, made mandarin and chocolate pockets and two spectacular breakfast brioche loaves with sultana raisins and chocolate chips!

Ingredients
- 2 cups type 1 flour (about 8.8 oz / 250 g)
- 4 1/3 tbsp rice syrup (about 2.3 oz / 65 g)
- 6 tbsp warm water (about 3 fl oz / 90 ml)
- 1/4 oz fresh brewer's yeast (about 7 g)
- 3 1/3 tbsp seed oil (about 1.7 fl oz / 50 ml)
- 1 tsp unsprayed lemon zest
- 1 tsp ground cinnamon
- 1 1/4 tsp salt (about 7 g)
Preparation
In a measuring jug, dissolve the brewer’s yeast in the warm water. Meanwhile, put the dry ingredients in a large bowl: flour, salt, cinnamon and grated lemon zest (fig. 1).
Mix and immediately pour in the oil, incorporating it with hand movements that start from the bottom of the bowl and lift the flour like a sprinkle, rubbing it (fig. 2).
Then add the rice syrup in a thin stream (fig. 3).
And finally the water with the yeast (fig. 4).
Work the dough with your hands until it becomes firmer (fig. 5).
Then transfer it onto a floured work surface and continue kneading (fig. 6).
Until you form a smooth ball (fig. 7).
Let it rest for 20′ then use it for whatever you wish. And voilà…your basic briosciato dough is ready to be enjoyed!
