Do you know hummus? It is a delicious Arabic sauce made from legumes and tahini, which is sesame seed paste. Traditionally, it is prepared with chickpeas, but it can also be customized with other types of legumes. Here is the alternative basic recipe, using cannellini beans already cooked in a can, which are therefore more practical and faster than dried ones. Thus, you can create a dip to accompany your dishes really in just a few simple steps! This neutral base can be further enriched with whatever your imagination suggests. For instance, I added fresh rosemary, but nothing stops you from using spices like ginger and turmeric or other herbs like mint, basil, or parsley. Try my version with the addition of fennel and capers, a delight you can even pair with fish! It is very easy to prepare; you will literally fall in love with it because it is delicate and very versatile. It will be perfect to enrich your appetizers and aperitifs, to accompany red and white meats in an unusual and original way. It will be fantastic in summer salads and valuable for filling sandwiches, wraps, and flatbreads. In short, a versatile recipe that should never be missing from your tables.
All “vegan” recipes are free from meat and/or fish, nor is it possible to use other animal protein-based foods, such as eggs and cheese.

Ingredients:
- 8 oz canned cannellini beans
- 1 1/2 tbsp tahini
- 1 sprig rosemary
- to taste garlic powder (optional)
- 2 tbsps extra virgin olive oil
- 1 pinch salt
- to taste ground black pepper
Preparation:
Place the cannellini beans, tahini, olive oil, salt, and your preferred herbs in a blender, in my case rosemary (fig. 1)
Blend until a thick and creamy consistency is achieved (fig. 2).
Transfer to a bowl, cover with cling film, and store in the fridge. Before serving, add a drizzle of raw olive oil.
And voilà… your cannellini bean hummus is ready to be enjoyed!
