Ingredients

  • 5 chicken drumsticks
  • 2 potatoes
  • 2 dark zucchini (medium)
  • 1 2/3 cups cherry tomatoes
  • 1 red onion
  • 1 tablespoon turmeric powder
  • 1/2 tsp cardamom
  • 1/2 tsp curry
  • 1 pinch garlic powder
  • 1 sprig rosemary
  • 1 bunch chives (or dried)
  • 3 tbsp + 1 tsp white wine
  • to taste extra virgin olive oil
  • 1 pinch salt
  • to taste pepper

Preparation

  • Start by cleaning the drumsticks. Pat them dry with kitchen paper. Do not rinse them, as washing does not remove pathogenic bacteria and instead increases the risk of contamination. Remove their skin using a pair of kitchen scissors.

  • Place them in a large bowl, massage them gently with the oil, 1/2 tablespoon of turmeric, the leaves of the rosemary torn and chopped, the chives and the garlic powder and let them marinate and rest for 30 minutes.

  • Meanwhile, wash and peel the vegetables. Cut the potatoes and zucchinis into chunks and halve the cherry tomatoes. Season with 2 generous tablespoons of oil, the remaining turmeric, a pinch of salt and a sprinkle of pepper.

  • Mix well and combine the vegetables with the chicken marinade so they can absorb the flavors.

  • Arrange the drumsticks and vegetables in a baking dish, trying not to overlap them too much. Add the onion cut into not-too-thin wedges and pour the white wine over everything.

  • Place in a hot oven at 392°F for about 40-45 minutes, turning halfway through cooking. Once the chicken is golden, turn off the oven, remove the dish and let it cool slightly (fig. 6).

  • And voilà… the chicken drumsticks with vegetables and turmeric baked in the oven are ready to be enjoyed!

Storage

👉Leftover chicken drumsticks, complete with vegetables and sauce, can be stored in the refrigerator for a maximum of 2-3 days. Use an airtight container, preferably glass, to avoid plastic absorbing the smell of the spices and the color of the turmeric. If you prepared a large portion, you can freeze the cooked dish for about 2-3 months, dividing it into single portions. This will make defrosting easier and prevent waste.
Note on vegetables: Bear in mind that very watery vegetables (such as zucchini) may become softer after thawing.

  • How to reheat to preserve juiciness?

    The main risk when reheating spiced chicken is that the meat becomes dry. To avoid this:
    In the oven: Cover the baking dish with a sheet of parchment paper, add a tablespoon of water or stock to the bottom to revive the spiced pan sauce and heat at 302°F for 10-15 minutes.
    In a skillet: Reheat over low heat with a lid on, adding a drizzle of oil or a little water to maintain moisture.
    Microwave: Use medium power and cover the dish with a microwave-safe lid to trap the steam.
