The fattoush salad is a typical Lebanese salad, fresh and tasty, great as a side dish or main course, especially if served, according to tradition, with the typical Arabic flatbread or pita bread seasoned and toasted, now easily available at well-stocked bakeries. Alternatively, you can always try pairing this dish with the much more common and native piadina, cooked on a hot griddle and seasoned with oil and rosemary. A real delight! I love these ethnic dishes typical of Middle Eastern countries, perhaps for their simplicity, but at the same time for their spicy and aromatic taste, which makes them truly unique. Here you will find some contamination like Sicilian cucumber and Calabrian red onion, but isn’t cooking also about multiculturalism? This delightful and unusual dish will be your highlight to bring something light and fresh to the table on hot summer days but also to amaze your guests with a few simple moves!

Ingredients
- 1 1/2 head lettuce (and crunchier and greener leaves)
- 1 cucumber
- 150 tomatoes (oblong)
- 1 red onion
- 5 oz feta
- 2 pita bread (or Arabic bread)
- 1 lemon juice
- 1 clump parsley
- to taste oregano
- 0.35 oz fresh ginger
- to taste extra virgin olive oil
- to taste salt
Preparation
Wash and prepare all the vegetables: slice the tomatoes, julienne the lettuce and thinly slice the cucumber using a mandolin or a knife, without peeling it.
Also slice the onions, removing their inner skin which is the least digestible part. Wash and dry the parsley; remove the stems and chop finely with a mezzaluna.
Cut the feta into cubes. Cut the piadina into wedges, toast it on the griddle for 2′-3′ on medium heat on both sides, then season it with oil, a pinch of salt, and rosemary.
Collect all the prepared ingredients in a bowl, except the pita bread, and season with oil, salt, grated ginger, and lemon juice. Mix well and serve the fattoush salad with toasted and seasoned bread wedges separately, so that everyone can take as much as they want.

👉Like any other salad, it is advisable to consume it immediately. If you need to prepare it in advance, you can cut the vegetables and store them in the refrigerator until it’s time to season and serve them.
