Avocado Balls: The Vegetarian Dinner-Saver with “Zero Fuss”
If, like me, you love the avocado, you absolutely must try this super quick and irresistible recipe! I tried it one evening when I came home ridiculously late and had very little time to prepare a good nutritious and tasty dish. I had noticed two ripe avocados in the fruit bowl and wondered if I could turn them into balls! The answer was yes! Not only is it possible, it’s highly recommended! They’re so good my husband devoured almost all of them. What might seem like a minor detail to many is not to me: these balls are a brilliant dinner-saver! No hassle — mix a few ingredients in one bowl, quickly form the balls, let them set briefly in the fridge and into the oven they go! They’ll become a staple when you want a simple but satisfying meal. Served with a fresh seasonal salad, they make a light and tasty vegetarian main, but can also become delicious finger food for an informal aperitif with friends, perhaps accompanied by some dipping sauces! Guaranteed success!

Ingredients

  • 2 avocados (ripe, approx 8 oz (230 g) net after trimming)
  • 1 egg
  • 1/2 cup breadcrumbs (about 50 g (1.8 oz))
  • 1/3 cup grated Grana Padano (about 40 g (1.4 oz))

Steps

  • Wash the avocados, rubbing the skin well under running water. With a knife, cut them in half and remove the pit.

  • Using a spoon, scoop out the flesh, transfer it to a large mixing bowl and add 2 pinches of salt and a grind of pepper.

  • Stir in the egg and the grated Grana Padano.

  • Finally add the breadcrumbs.

  • Mash all the ingredients with a fork or a potato masher until you obtain a smooth but compact mixture. Let rest about 30 minutes in the fridge or 15 minutes in the freezer to help it firm up more.

  • With slightly damp hands or food-safe latex gloves, scoop out portions weighing about 0.7 oz (20 g) and form your balls.

  • Place the balls on a baking sheet lined with parchment paper and drizzle the surface with a little oil. Bake in a preheated convection oven at 392°F for 15 minutes. Check after about 12 minutes and, if needed, flip them and continue for another 2–3 minutes.

  • Remove from the oven and serve immediately accompanied by a fresh seasonal salad.

👉 You can store the quick avocado balls in the refrigerator in suitable containers for 2–3 days, then reheat them for a couple of minutes in a preheated oven or in the microwave.

🔵 You can enrich the base of your balls by adding spices to taste, such as paprika, ginger or turmeric, and aromatic herbs like mint, fresh thyme, basil and parsley.

🔵 The target weight of about 20 grams (0.7 oz) per ball is aimed at speeding up preparation. You can freely make them slightly larger, but remember that the bigger they are the longer they will take to cook, and this also depends on your oven’s power. You can also pan-fry them a few minutes per side or cook them in an air fryer at 374°F for about 12 minutes.

  • 1. Do avocado balls turn dark?

    Oxidation is normal, but adding a little lime or lemon juice to the mixture helps keep the bright green color longer. In any case, eat them hot or warm for the best experience.

    Certainly. You can use a mashed boiled potato as a binder or a “flax egg” (ground flaxseed mixed with water) for a 100% vegan version.
