I tried it one day when I got home at an ungodly hour, and the time to whip up a good nutritious and tasty dish was really limited! My eyes fell on the fruit basket where there were two ripe avocados, and it was then that I wondered if I could use them to make meatballs! The answer to that question is yes! And not only is it possible, but absolutely recommended! They’re so good that my husband devoured almost all of them, but what may seem to many as an insignificant detail is not to me, because these meatballs are a fabulous dinner saver! No hassle, just mix a few ingredients in a bowl, form the meatballs quickly, and put everything in the oven! They will become a staple in your kitchen when you’re in the mood for a simple yet satisfying meal! Accompanied by a fresh seasonal salad, they are a light and tasty vegetarian main course, but, if needed, they transform into delicious finger food in an informal aperitif with friends, perhaps accompanied by some dipping sauces! Success is guaranteed!

Ingredients
- 2 avocado (ripe, about 8 oz of pulp net)
- 1 egg
- 1/2 cup breadcrumbs
- 1/3 cup Grana Padano cheese, grated

Steps
Wash the avocados by thoroughly scrubbing the skin under running water. With a knife, cut them in half and remove the pit.
With a spoon, scoop out the pulp, transfer it to a large bowl and add two pinches of salt and a grind of pepper.
Incorporate the egg and the grated Grana cheese.
Finally, add the breadcrumbs.
Mash all ingredients with a fork or potato masher until you get a smooth but firm dough.
With slightly damp hands or using latex food gloves, take portions weighing about 0.7 oz each and form your meatballs.
Place the meatballs on a baking sheet lined with parchment paper and drizzle a little oil on the surface. Bake in a preheated oven at 390°F for 15 minutes.
Remove from oven and serve immediately accompanied by a fresh seasonal salad.
