The summer season is approaching, and it’s time for appetizers, for delicious sauces to prepare to accompany meat dishes, chicken, salads, meatballs, and everything else you can think of! Yes, because this sauce, besides being fresh and tasty, is also very versatile and will be great even spread on bread! Radishes, with their fresh and slightly spicy taste, are a perfect basic ingredient to add a touch of creativity to any of your recipes. It is prepared in a flash, and with a few simple steps, you will bring to the table a tasty and original variant of the now-famous tzatziki sauce made with cucumbers. Since it is still spring, in fact, just replace the latter with radishes and fresh chives, some spices based on ginger and turmeric if you like, and you’re done!
All “vegetarian” recipes are free from meat and/or fish (N.B. the use of other animal protein-based foods, such as eggs and cheeses, is possible).

Ingredients:
- 6 oz plain Greek yogurt
- 10 radishes
- 1 bunch chives
- 1 1/2 tsp ground turmeric
- 1 1/2 tsp ground ginger
- to taste garlic powder
- 2 tbsps extra virgin olive oil
- to taste salt
- to taste black pepper
Preparation:
Take the radishes, remove the roots and leaves, wash them well, dry them, and grate them with a wide-hole grater. Season with a pinch of salt and let it rest for 10 minutes to drain the water inside them (fig. 1).
Meanwhile, chop the chives with a knife (fig. 2).
Pour the yogurt into a bowl, drizzle with olive oil, add the spices, a pinch of salt, and a dash of pepper (fig. 3).
Mix, then add the chives (fig. 4).
Squeeze the radishes with your hands and add them to the rest of the ingredients (fig. 5).
Serve or store in the fridge covered with plastic wrap until ready to eat.
And voilà… your radish and chive tzatziki is ready to enjoy!
