Today, as promised, I want to offer you a surprising and scenic idea to take advantage of the recipe for savory cookies with Grana Padano and mixed seeds that I shared with you a few days ago! Undoubtedly, even enjoyed plain, they can be very satisfying to the palate and enrich the holiday table and special occasions. However, garnished this way, their savoriness will be further enhanced. I prepared them as an appetizer for the New Year’s Eve dinner, and I must say they were literally devoured! You’ll make an incredible impression! The concept of serving cookies at the beginning of the meal instead of as a dessert is something truly original that will surprise all your guests! And the best part is that it’s super easy to make. You just need to prepare the basic recipe and garnish them shortly before serving with a soft mousse made from spreadable cheese and honey. Then, to complete it all, add a piece of pear, or if the season permits, a grape, or other seasonal fruit to your liking, and you’re done! They are divine, but do I even need to say it? - 1 1/4 cups spelt flour
- 5 2/3 tbsp butter
- 2 oz Grana Padano DOP (grated)
- 2 egg yolks
- 1 1/2 tbsp sugar
- 1/4 cup mixed seeds
- 1 tsp salt
- 3 tbsp soft cheese spread
- 1 tsp orange blossom honey
- 2 Coscia pears

Preparation
After following the steps to prepare the cookies and baking them in a preheated static oven at 340°F for 15 minutes. Remove from the oven and let cool slightly.
Meanwhile, clean and cut the pears into cubes. Separately, mix in a bowl the soft cheese spread with honey. Place a little more than a teaspoon tip in the center of each cookie and garnish with a pear piece.
Serve the mousse on the cookies only at the time of serving.

👉 The savory cookies with cheese honey mousse and pears can be stored in the refrigerator for 1 day inside suitable refrigeration containers. Therefore, I always recommend garnishing the cookies only shortly before serving to avoid losing all their fragrance and crunchiness.
Can I use other flours instead of whole flour?
Yes, you can still give a rustic flavor even with flours such as spelt flour, oat flour or type 1 flour. In any case, type 00 will also be fine.
Can I replace the pears with other fruits, and which ones?
Yes, depending on the season, there are other fruits that pair wonderfully with these savory flavors like grapes or currants, blueberries or blackberries.
