Of these Christmas holidays , only the Epiphany remains, which usually brings sweets and for the naughty ones, good coal! Instead, I bring you these savory cookies, which in my opinion are truly delicious and very versatile. You can enjoy them pure to accompany cold cuts, cheeses, and even seasonal fruits or create some very tasty appetizers for an original and delicious aperitif! Meanwhile, I’ll tell you they are made with Grana Padano, so their savoriness is already imaginable, plus the addition of mixed oilseeds is a full of useful supplements for the infinity of proteins, vitamins, minerals, fibers, and essential fats. In the diet of vegetarians and especially athletes, these seeds provide many advantageous properties, thanks also to the presence of unsaturated and polyunsaturated fats. In particular, omega-3 and omega-6, which not only lack cholesterol but even have the capacity to lower levels of “bad” cholesterol and instead promote the increase of “good” cholesterol. That said, I invite you to try them because they are exceptional, one leads to another! Being spelt, they are also very rustic, and after crunching the first one, you can’t stop! You’ve been warned! I proposed them during the New Year’s Eve dinner aperitif, but they are perfect for all occasions. With this basic dough, you can create many shapes, leave them on the surface simple or pass, as I did, a themed decorative rolling pin. You can also personalize them with the spices that your imagination suggests! You’ll see they will be a hit!

- 1 ¼ cups whole spelt flour
- 5 ½ tbsp butter
- 2 oz Grana Padano PDO (grated)
- 2 egg yolks
- 1 ½ tbsp sugar
- 3 tbsp mixed seeds (I used pumpkin, flax, and sesame seeds)
- 1 tsp salt

- 1 Cling wrap

Preparation
In a large mixing bowl, combine the sifted flour with the Grana Padano and salt (fig. 1).
Separately, using a hand whisk, blend the egg yolks with the sugar (fig. 2).
Add the soft butter cut into cubes and continue mixing (fig. 3).
Then add the flour, Grana Padano, and salt mixture to this, along with the mixed seeds, and begin kneading with your hands (fig. 4).
Form a dough ball, cover it with cling wrap, and refrigerate for 1 hour wrapped in cling wrap (fig. 5).
Roll out the dough on a floured surface to a thickness of ¼ inch and cut out the cookies with a suitable cutter (fig. 6).
Place the cookies on a baking tray lined with parchment paper and chill in the fridge for about 20 minutes (fig. 7).
Bake in a preheated oven at 340°F for 15 minutes. Remove from oven and let cool. Perfect as a savory snack or to accompany an aperitif.
