WATER PASTRY (Recipe without butter and eggs)

Have I ever told you how much I like to vary doughs to create pastries that are lighter and more digestible while still being tasty? Well, you will literally fall in love with the water pastry! And this is not just because it’s made without eggs or butter, but its peculiarity is that it requires a warm water dough with just a tiny bit of oil. Moreover, even for those who always have little time to spend in the kitchen, this recipe is ideal! It takes less than five minutes to gather all the ingredients in a bowl, mix them, and, without even resting it in the fridge, spread the dough into the mold directly with your hands! And goodbye rolling pin! This means you can bake lots of delicious pies always different, depending on the filling you decide to use, without the fear that they are too fatty and high in calories. Get used to the idea of being able to prepare a much healthier snack for your kids more often with really minimal effort! Try it, and you’ll see that it will become a staple recipe for every occasion!

Ingredients

  • 1 1/4 cups all-purpose flour
  • 2.5 oz erythritol (or 1/4 cup cane sugar)
  • 1/4 cup water
  • 2 tbsp vegetable oil
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 pinch salt

Steps

  • Preparing the water pastry is really easy and quick. In a mixing bowl, mix the dry ingredients, i.e., erythritol with sifted flour and baking powder, and a pinch of salt (fig. 1).

  • Add the vegetable oil and warm water (fig. 2).

  • Finally, add the vanilla extract and mix quickly with a whisk (fig. 3).

  • In a few minutes, you will obtain a smooth and homogeneous dough (fig. 4).

  • And voilà… the water pastry without butter and eggs is ready to be used!

Storage

👉 If you don’t use the water pastry right away, you can store it wrapped in plastic wrap in the fridge for a maximum of 2-3 days.
