Whole Grain Waffles and Agave Syrup: A Healthy and Re-mineralizing Breakfast
The waffle (also known as wafel or gaufre) is the king of international breakfasts, loved for its typical honeycomb structure and its incredible softness. Often considered a “guilty pleasure,” in the version I propose today it turns into a healthy and balanced meal, perfect to recharge the whole family with genuine and whole ingredients.

Forget refined products. Nowadays food awareness pushes us towards more careful choices but without giving up taste. That’s why whole coconut flour and sugar should become a must. They maintain intact fibers and nutrients, providing slow-releasing energy that avoids morning glycemic spikes. Unlike honey, agave syrup has a much lower glycemic index. It is a true natural supplement thanks to the re-mineralizing action given by calcium, magnesium, potassium, and iron. Ingredients

- 2 cups whole wheat flour
- 2 Eggs (at room temp.)
- 5 tbsps coconut sugar
- 2.5 oz butter
- 1 cup milk
- 4 tsps grated coconut (shredded)
- 1 vial vanilla aroma (or vanilla extract)
- 1 tsp baking powder
- 1 pinch salt
- to taste grated coconut (shredded)
- to taste agave syrup
- to taste powdered sugar

Preparation
In a large bowl, mix the eggs at room temperature with the whole sugar and vanilla aroma.
Add the melted butter previously melted in a bain-marie and beat with electric beaters until a light and frothy mixture is obtained.
Then also incorporate the flour and sifted baking powder little by little with a pinch of salt, alternating with the milk, and continue to beat with electric beaters.
Beat until you form a smooth and homogeneous batter, which you will let rest for 10′, covered with a dishcloth. Heat well then the waffle iron, in my case there was no need to butter it, but I recommend adding a small knob and brushing over the entire surface. Pour in the center about 1-2 ladles of batter depending on the size you want.
Close the iron and let cook for 3′, then remove the waffle with the help of a spatula and transfer it to a cooling rack and proceed with the rest of the mixture until depleted.
Once ready, stack them or cut them in half and garnish with a drizzle of agave syrup to taste or a few tablespoons of plain yogurt and pieces of fruit. The variations can become endless!
Also sprinkle with shredded coconut and serve. And voilà… the whole grain waffles with coconut and agave syrup are ready to be enjoyed!

Storage
👉 Waffles should be consumed immediately while still warm; however, if not garnished with agave syrup or similar ingredients, they can be stored at room temperature in airtight containers for up to 1-2 days. To make them crispy again, heat them for 1′ in the toaster or air fryer: they’ll be just like freshly made!
Tips, notes, variations, and suggestions
🟣 If you don’t have the typical waffle iron, don’t worry, you can use any regular grill pan, so while cooking the waffles, you can follow the direction of the stripes horizontally first and, by turning them, vertically next! This will create a checkered effect quite similar. However, don’t forget to butter and heat the grill pan well first.
🟣 You can replace agave syrup with acacia honey or maple syrup.
🟣 For a more indulgent version, serve the waffles also with melted chocolate, dollops of whipped cream, and fresh fruit.
1. How to make whole grain waffles soft and not chewy?
The secret is not to overwork the batter. Mix the liquid and dry ingredients just until combined. Also, make sure the waffle iron is hot before pouring the batter: the thermal shock will ensure a soft interior and a slightly crispy exterior.
