This week, driven by the desire to use up my apple butter stock, I thought of another recipe that would be suitable for the whole family and perfect for breakfast! These donuts made with apple butter, whole spelt flour, and agave syrup are definitely the answer to this need! Sweet but not too much, rustic and very soft, they are the right compromise between goodness and genuineness! In fact, they are sweetened mainly with agave syrup and being free of fats, they are really light and digestible. I pleasantly shared them one afternoon with a dear cousin while sipping a steaming cup of infusion, but they are also fantastic dipped in coffee and milk. You can also garnish them with honey or a delicious chocolate topping, or more simply dusted with powdered sugar! Preparing them will really be a breeze, as you will only need two bowls and a hand whisk, and just the time to bake them in the oven. You will bake a healthy breakfast for your children rich in fiber given by apples and with a low glycemic index thanks to the agave syrup as a substitute for sugar. Much better than the usual pre-packaged snacks, don’t you think?
CURIOSITY: Did you know that agave syrup is derived from the blue agave, a succulent plant from the Mexican desert? Its juice has a remineralizing action, as it contains a large amount of minerals such as calcium, magnesium, potassium, and iron; and despite containing about 90% fructose, it maintains an even lower glycemic index than honey itself. This means it is absolutely suitable for people with diabetes as it will not increase insulin production. Furthermore, having a low-calorie content, it is considered a natural sweetener, therefore suitable for low-calorie diets. So, it can be consumed by those who are trying to lose a few pounds, as well as by children, as it is rich in valuable nutrients. In cooking, it can be used to sweeten beverages as it is tasteless, or used as an ingredient in desserts, remembering, however, to use less of it compared to white sugar, as 75 grams of agave juice sweetens like about 100 grams of refined sugar.

Ingredients:
- 1 1/4 cups whole spelt flour
- 7 oz apple butter
- 1/2 cup plain yogurt
- 1 egg
- 4 tbsp brown sugar
- 2 tsp baking powder
- 2 tsp milk
- 1 orange flavor
- 1/2 tsp baking soda
- 1 pinch salt
- to taste agave syrup
- to taste powdered sugar
- to taste poppy seeds

- 2 Bowls
- 1 Hand whisk
- 1 Sieve
- 1 Donut mold
Preparation:
In a large bowl, sift the dry ingredients, namely the spelt flour, baking powder, and baking soda.
In another bowl, pour the apple butter and yogurt.
Also incorporate the egg, orange flavor, milk, and sugar, and start mixing with a hand whisk.
You should obtain a smooth and homogeneous mixture.
Gradually incorporate the flours to avoid lumps.
Pour the batter into the donut mold, without filling it to the brim to prevent it from overflowing during baking.
Bake your donuts in a preheated oven at 350°F for 20’/25′. The toothpick test will confirm they are done. Remove from oven and let them cool before unmolding.
Once cooled, unmold the donuts and garnish with agave syrup and poppy seeds as desired.
You can also simply dust them with plenty of powdered sugar.
And voilà… your whole spelt donuts with apple butter are ready to be enjoyed!
