WHOLE WHEAT WAFFLES WITH COCONUT AND AGAVE SYRUP

The waffle, also known as wafel, waffel or gaufre, is a French-origin wafer dessert and Belgian, cooked on double hot plates that give it this characteristic grid-like appearance. Great for breakfast or snack, it has a very soft texture and versatility to be garnished with whatever your creativity suggests! Even the batters can differ greatly, ranging from light and more dietary mixtures to those richer in proteins and fats. That’s why I always recommend varying them every time you decide to prepare them, obviously making sure to get the special waffle maker! Today I propose a really simple recipe based on whole wheat flour and whole cane sugar, which, as many know, are a much happier and healthier choice than refined products. All garnished with coconut flour and agave syrup, which unlike honey, maintains a much lower glycemic index and has the advantage of having a remineralizing action, thanks to the large amount of calcium, magnesium, potassium, and iron. In short, they are prepared in a few minutes, and the rest time is equally short. What are you still waiting for? Ingredients

  • 2 cups whole wheat flour
  • 2 Eggs (at room temperature)
  • 5 tablespoons cane sugar (whole)
  • 5 tablespoons butter
  • 3/4 cup milk
  • 4 teaspoons grated coconut
  • 1 vanilla flavor
  • 1 1/2 teaspoon baking powder
  • 1 pinch salt
  • to taste grated coconut
  • to taste agave syrup
  • to taste powdered sugar

  • 1 Electric whisk
  • 1 Tea towel
  • 1 Ladle
  • 1 Electric heating plate
  • 1 Cooling rack
  • 1 Spatula

Preparation

  • In a large bowl, work the eggs at room temperature with the whole sugar and vanilla flavor.

  • Add the butter previously melted in a bain-marie and work with the electric whisks until you get a light and frothy mixture.

  • Then slowly incorporate the flour and sifted baking powder with a pinch of salt, alternating them with the milk, and continue working with the electric whisks.

  • Beat until a smooth and homogeneous batter forms, which you will let rest for 10′, covered with a tea towel. Then heat the waffle iron well, in my case there was no need to butter it, but I recommend adding a small knob of butter and brushing it over the entire surface. Pour about 1-2 ladles of batter in the center depending on its size.

  • Close the waffle iron and let it cook for 3′, then remove the waffle with a spatula and transfer it to a cooling rack and proceed with the rest of the batter until it is used up.

  • Once ready, stack them or cut them in half and garnish with a drizzle of agave syrup as desired.

  • Sprinkle also with grated coconut and powdered sugar and serve. And voilà… your whole wheat waffles with coconut and agave syrup are ready to be enjoyed!

👉 Waffles should be consumed immediately, while still warm, however, if not garnished with agave syrup or other similar ingredients, they can be stored at room temperature inside airtight containers for up to 1-2 days.

🟣 If you don’t have the typical waffle maker, don’t worry, you can use any common grill pan, so that, when cooking the waffles, you can first follow the direction of the horizontal lines and, turning them, vertically! You will thus obtain a checkered effect very similar. But please, don’t forget to butter and heat the pan well first.

🟣 You can also replace the agave syrup with acacia honey or maple syrup.

🟣 For a more indulgent version, you can also serve the waffles with melted chocolate, whipped cream, and fresh fruit.
