Apple Treats Ingredients
- 2 eggs
- 1/2 cup sugar
- 1 lbs apples
- 1 container plain natural yogurt (4 oz)
- 1 1/3 cups flour
- 3 1/3 tbsp vegetable oil
- 2 oz raisins
- 1 tsp ground cinnamon
- 1/2 packet baking powder (8 grams)
- to taste powdered sugar (for decoration)
What you need for the Muffins
- Muffin molds
- Mixer
How to prepare Apple Muffins
Peel the apples. Cut half into small cubes and the other half into thin slices. Let the raisins soften in a small bowl with hot water.
Beat the 2 eggs with the sugar using an electric mixer for 5-6 minutes until you have a light and fluffy mixture.
Add the vegetable oil and a container of plain yogurt. Mix
Add the sifted flour, baking powder, and cinnamon. Mix.
Add the diced apples and the drained and squeezed raisins. Simply mix them with a spatula to incorporate them into the batter.
Fill the silicone muffin molds two-thirds full with the batter. With these quantities, I made 12 muffins.
Arrange 3-4 apple slices letting them slightly sink into the batter.
Bake the Apple Muffins in a preheated oven at 350°F for 22-24 minutes. Always do the toothpick test to check the internal cooking. Let them cool and decorate them as desired with powdered sugar.
