The recipe I want to share with you today is for a simple and quick Apricot Dessert. The super-fast apricot tartlets are prepared in just a few minutes, you only need a bowl and a fork. They are soft Apricot Cookies that literally melt in your mouth; perfect for breakfast, a snack, or any time of the day. They are very soft, moist inside, and so, so good. Ingredients for Apricot Tartlets

  • 1 egg
  • 1/4 cup sugar
  • 1 1/2 cups flour
  • 3 tbsp butter (melted)
  • 14 oz apricots
  • 1/2 packet baking powder (7 grams)
  • as needed powdered sugar (for decoration)

How to prepare Apricot Tartlets

  • Wash the apricots. Clean them by removing the pit and cut them into small pieces.

  • In a bowl, beat the egg with the sugar. You can simply use a fork or a whisk. Add the melted butter and mix.

  • Add the sifted flour and baking powder. Mix and finish by adding the apricots. Mix well to incorporate them into the batter.

  • Using two spoons, scoop small dollops of batter, roughly the same size, slightly spaced apart on a baking tray lined with parchment paper.

  • Bake the Soft Apricot Tartlets in a preheated oven at 340°F for 16-18 minutes. Check the internal doneness with the toothpick test. Let them cool and dust them with powdered sugar if desired.
