Ingredients for Cauliflower Croquettes
- 1.1 lbs cauliflower
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- to taste extra virgin olive oil
- to taste salt
How to Prepare Baked Cauliflower Meatballs
Clean the cauliflower by removing the outer leaves and the tougher stalk. Cut it into florets and rinse them under running water. Let them drain. Boil the cauliflower in salted boiling water for 12–14 minutes. Test the cooking by piercing with a fork. Drain and transfer it to a bowl.
Mash the cauliflower with a potato masher or simply with a fork. Add an egg, the grated Parmesan cheese, and 4–5 tablespoons of breadcrumbs. Mix well. Form the meatballs by taking a portion of the mixture and compacting it in your hands. Then roll it in breadcrumbs on all sides.
Place the Meatballs as you prepare them on a baking sheet lined with parchment paper or greased. Add a drizzle of extra virgin olive oil on top. Bake the Cauliflower Meatballs in a preheated static oven at 375°F for 16–18 minutes or until golden brown.

If there are leftover meatballs, store them in a container in the fridge for 1-2 days.
