Ingredients for Cauliflower Croquettes

  • 1.1 lbs cauliflower
  • 2 medium potatoes
  • 1⁄4 cup grated Parmesan cheese
  • 1⁄3 cup breadcrumbs
  • as needed extra virgin olive oil
  • 1 sprig parsley
  • as needed salt
  • 1 pinch pepper

How to prepare baked cauliflower meatballs

  • Clean the cauliflower by removing the outer leaves and divide it into florets. Wash it and let it drain. Peel the potatoes and wash them. Cook both the potatoes and the cauliflower in boiling water. It takes about 12-14 minutes for the cauliflower. For the potatoes, it takes 25-30 minutes. Check the doneness of both by pricking them with a fork.

  • Drain the cauliflower and potatoes. Cut the potatoes into cubes. Pour the potatoes and boiled vegetables into a bowl. Using a potato masher, reduce both to a puree. It doesn’t matter if there are some unmashed pieces.

  • Add a pinch of salt and pepper. Also add the grated Parmesan cheese, chopped parsley, and 3-4 tablespoons of breadcrumbs. Mix well simply with a fork.

  • Form the meatballs. Take a portion of the mixture and roll it between your hands to form the cauliflower croquettes. As you prepare them, roll them in breadcrumbs, making sure they adhere well on all sides.

  • Place them side by side on a baking tray lined with parchment paper. Drizzle them with oil and bake them in a preheated oven in static mode at 374°F for 18-20 minutes.
    * If you prefer to cook them in an air fryer, proceed in the same way and then cook them in the fryer at 365°F for 16-18 minutes.
