Ingredients for Chicken Croquettes
- 10.5 oz chicken breast
- 4 slices sandwich bread
- 1 egg
- 1/3 cup grated Grana Padano cheese
- 1 sprig parsley
- 1 pinch pepper
- to taste salt
- to taste extra virgin olive oil
- 1/3 cup breadcrumbs
How to Prepare Baked Chicken Meatballs
Transfer the chicken breast into a blender along with the slices of sandwich bread. Blend to obtain a soft mixture. Transfer the mixture to a bowl. Add an egg, the grated cheese, a pinch of salt, a pinch of pepper, and the chopped parsley. Mix well with a fork.
If the mixture is too soft to form the meatballs, add 2-3 tablespoons of breadcrumbs. Form the Meatballs. Take a small portion of the mixture and roll it between your hands to form the Meatballs. As you prepare them, roll them in breadcrumbs, making sure it sticks to all sides.
Prepare all the Chicken Meatballs until the mixture is used up and place them on a greased baking sheet or one lined with parchment paper. Add a drizzle of olive oil on top. Bake the meatballs in a preheated static oven at 375°F for 18-20 minutes.
Air Fryer Cooking: Place the meatballs in a tray suitable for your air fryer or simply on the grill lined with parchment paper. Spray them with oil and let them cook at 365°F for 16-18 minutes.
