Baked chicken with eggplants for a tasty and flavorful second course. The recipe I want to tell you about today came about a bit by chance. I had some striped purple eggplants and some chicken breast slices and wanted to prepare a simple dish for lunch. So here’s the idea of using them together for a simple but very very good recipe. I cut the eggplants into cubes, the chicken into strips, and also added some cherry tomatoes. A very simple breading with breadcrumbs and grated Parmesan and straight into the oven. Ingredients for Eggplants with Chicken and Cherry Tomatoes
- 1.1 lbs chicken breast
- 1.1 lbs eggplants
- 2 cups cherry tomatoes
- 1/2 cup breadcrumbs
- 1/3 cup grated Parmesan
- to taste extra virgin olive oil
- 1 sprig basil
- to taste salt
How to prepare Chicken with Eggplants and Cherry Tomatoes
Wash the eggplants. Remove the stem and, without peeling them, first cut into thick slices then into cubes. Also, cut the chicken breast into strips. Wash the cherry tomatoes and cut them into quarters. Place the chicken, eggplants, and cherry tomatoes in a bowl.
Add 3 tablespoons of extra virgin olive oil and mix with 2 tablespoons. Now add the breadcrumbs, grated Parmesan, a pinch of salt, and chopped basil. Mix.
Pour everything into a baking dish in a rather thin layer. Add a drizzle of extra virgin olive oil on top. Cook the Eggplants with Chicken Breast in the preheated oven at 375°F in static mode for 20 minutes.
For air fryer cooking: cook at 375°F for 18 minutes
