Ingredients for Baked Chicken
- 1.32 lbs chicken drumsticks
- 1.10 lbs potatoes
- 1/3 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- 1 sprig rosemary
- 2 cloves garlic
- to taste salt
- 1 pinch pepper
How to prepare Baked Chicken and Potatoes
Peel the potatoes. Wash them and cut them into cubes of about the same size for even cooking. For the chicken, I used drumsticks and thigh pieces, but you can choose the pieces you prefer.
Pour 2 tablespoons of olive oil on the bottom of a baking dish or pan. Arrange the chicken pieces inside. Add the potatoes, distributing them among the chicken pieces. Add the whole garlic cloves, or if you prefer, you can chop them.
Salt, add a pinch of pepper, and sprinkle with grated Parmesan cheese. Drizzle with oil on top and lastly pour half a glass of water sideways into the baking dish.
Cover the dish with a sheet of aluminum foil and bake for 30 minutes in a preheated static oven at 392°F, placing the dish on the lower part of the oven. Remove the foil and continue cooking the Baked Chicken with Potatoes for another 30 minutes. This way, the chicken will cook well inside, staying tender and crispy outside.
