Ingredients for Chicken with Potatoes and Zucchini
- 14 oz chicken breasts
- 4 cups zucchini
- 4 cups potatoes
- 7 oz cherry tomatoes
- 1/4 cup breadcrumbs
- 1/4 cup grated parmesan
- 2 tbsps extra virgin olive oil
- 1 bunch parsley
- to taste salt
How to Prepare Oven Baked Chicken Bites with Potatoes and Zucchini
First, peel the potatoes, wash them, and cut them into cubes. Soften the potatoes by plunging them into boiling water and letting them cook for 8-10 minutes. They should not be fully cooked, just softened to finish cooking in the oven.
Cut the chicken breast into small pieces. Wash the zucchini and cherry tomatoes. Trim the ends of the zucchini and cut them into cubes of roughly the same size. Cut the cherry tomatoes into 2 or 4 parts.
Place zucchini, potatoes, cherry tomatoes, and chicken in a bowl. Add 3 tablespoons of extra virgin olive oil and mix with 2 tablespoons to oil all the ingredients. Add the breadcrumbs, chopped parsley, a pinch of salt, and grated Parmesan. Mix well with 2 tablespoons.
Transfer all ingredients to an oiled baking dish. Spread any leftover coating remaining in the bowl on top. Add a drizzle of extra virgin olive oil on top. Cook the Chicken Bites with Zucchini and Potatoes in a hot oven at 375°F in static mode for 20 minutes.
