Ingredients for Baked Potatoes with Mushrooms

  • 18 oz oyster mushrooms
  • 1.3 lbs potatoes
  • 4 tbsp breadcrumbs
  • 1 oz grated parmesan cheese
  • to taste extra virgin olive oil
  • 1 sprig rosemary
  • 1 clove garlic
  • to taste salt

How to prepare Baked Mushrooms with Potatoes

  • Clean the mushrooms by removing the earthy end part. You can clean them by simply wiping with a kitchen paper towel or, if you prefer, you can quickly wash them under running water. Cut them into pieces.

  • Peel the potatoes, wash them and cut them into cubes. Mix the mushrooms with the potatoes and a clove of garlic in a bowl. Pour into an oiled baking dish. Add a pinch of salt, breadcrumbs, and grated parmesan cheese.

  • Finally, add the chopped rosemary and drizzle with extra virgin olive oil. Add half a glass of water to the side of the baking dish; this will facilitate the cooking of the potatoes. Cover the baking dish with a sheet of aluminum foil or parchment paper.

  • Bake the Mushrooms and Potatoes in a preheated oven at 375°F in static mode for 30 minutes. After the first 20 minutes of cooking, remove the cover and finish cooking.
