The Baked Pasta was never missing, in a huge baking dish wrapped in a checkered tablecloth; it arrived still hot and steaming to brighten up those beautiful cheerful and carefree moments with its goodness. Even today, when I prepare Baked Pasta, I seem to hear the aromas, voices, and laughter that made a perfect day! The recipe I want to share with you today is that of a Baked Pasta rich in melted mozzarella, tasty and flavorful but also very simple to prepare. The recipe is inspired by the famous Gnocchi alla Sorrentina using the same simple ingredients and simply replacing the potato gnocchi with pasta. Ingredients for Tomato-Baked Pasta
- 13 oz pasta (your preferred type)
- 7 oz mozzarella
- 1.5 oz Grana Padano, grated
- 1.7 cups tomato sauce
- 2 tbsps extra virgin olive oil
- to taste salt
- 1 sprig basil
How to prepare Baked Pasta with Mozzarella
First, prepare the sauce. Pour 2 tablespoons of extra virgin olive oil and the thinly sliced onion into a saucepan. Let it slightly fry over medium heat for 1-2 minutes. Add the tomato sauce, a few tablespoons of water, some basil leaves, and a pinch of salt. Let the sauce cook on low heat for 12-14 minutes.
While the sauce is cooking, cook the pasta as well. Throw the pasta, penne rigate, or another type, into plenty of salted boiling water and cook it. Drain the pasta al dente and put it in a bowl. Add 2/3 of the tomato sauce and 2/3 of the mozzarella cut into small cubes. Mix.
Pour the pasta into a baking dish. Top with the remaining sauce and more mozzarella cubes. Sprinkle with plenty of grated cheese. Bake the Pasta alla Sorrentina in a preheated static oven at 375°F for 18-20 minutes. Serve the pasta, adding fresh basil leaves at the end of cooking for an amazing aroma!
