Ingredients for Perfect Potato Croquettes

  • 1.54 lbs potatoes
  • 1.76 oz breadcrumbs
  • 1.76 oz grated parmesan
  • 1 egg
  • 6.35 oz scamorza cheese
  • 4 tsps extra virgin olive oil
  • to taste salt

What You Need to Prepare the Baked Croquettes

How to Prepare Filled Potato Croquettes

  • Peel the potatoes. Wash them and let them cook in boiling water for 25-30 minutes. The cooking time of the potatoes depends on the quality and size of the potatoes you use. Therefore, I recommend testing the cooking with the prongs of a fork.

  • Drain the potatoes, cut them into pieces, and mash them with a potato masher or simply with a fork. Separate the egg yolk from the egg white, placing them in 2 separate bowls.

  • Add a pinch of salt, the grated parmesan, and only the egg yolk. Mix the mixture well with a fork and let it firm up in the fridge for 30 minutes. Cut the scamorza cheese into cubes.

  • Take the mixture, take a small amount, and flatten it between your hands. Place a cheese cube in the center and carefully close the potato mixture around it. Prepare all the Potato Croquettes until the mixture is finished.

  • Beat the egg white with a fork until it is soft and frothy. Place the breadcrumbs in another bowl. Pass the Potato Croquettes first in the egg white and then in the breadcrumbs, making sure it adheres well on all sides.

  • As you prepare them, place them on a baking sheet lined with parchment paper. Lightly oil the Potato Croquettes. Let them cook in a preheated oven at 392°F for 18-20 minutes.

For tastier Potato Balls, you can add some chopped cooked ham or speck to the filling

If you have leftovers, you can store them in the fridge in a container for 2 days or freeze them. My advice is to prepare them in advance and without cooking them, place them on a tray and freeze them. Once frozen, you can transfer them to a food bag. You just need to let them thaw and then cook them as you prefer
