- 1.1 lbs potatoes
- 1.3 lbs savoy cabbage
- 1/2 cup grated parmesan
- 2 tbsps extra virgin olive oil
- 1/3 cup breadcrumbs
- to taste salt

How to Prepare Baked Potatoes and Cabbage
Peel the potatoes and wash them. Clean the cabbage by removing the more damaged outer leaves. With the help of a mandoline, slice the cabbage very thinly into a colander. Rinse it under running water and let it drain well.
Slice the potatoes very thinly with the mandoline as well. Oil a baking dish and sprinkle it with breadcrumbs. Make a layer of potatoes on the bottom, slightly overlapping them. Cover with a layer of cabbage and sprinkle with 2 tablespoons of grated parmesan.
Continue the preparation the same way with another layer of potatoes, cabbage, and parmesan. Continue in the same way until all the ingredients are used up. Add salt and cover with the remaining grated parmesan, 3 tablespoons of breadcrumbs, and a drizzle of extra virgin olive oil.
Cover the baking dish with a sheet of aluminum foil. Cook the potatoes and cabbage in the hot oven at 375°F for 35-40 minutes. After 20 minutes of cooking, remove the aluminum foil and continue cooking for another 15-20 minutes. Test the cooking with a fork.

If you have leftover potatoes, store them in a container in the fridge. Just heat them for a few minutes in the hot oven or microwave.
