Crispy and tasty baked pumpkin cutlets. The recipe I want to tell you about today features my beloved pumpkin in a simple and quick recipe. I simply grated the pumpkin into thin strips using a grater with large holes and then added a few other ingredients to form the Cutlets. I simply baked them, but if you prefer, you can also fry them, cook them in a pan, or in an air fryer; they will always be delicious. If you like pumpkin, but even if you’re not a huge fan, this is a recipe not to miss. Let’s head to the kitchen and prepare the Breaded Baked Pumpkin together.

Ingredients for the Pumpkin Cutlets
- 14 oz pumpkin (cleaned)
- 1/2 cup grated parmesan
- 3/4 cup breadcrumbs
- 2 sprigs rosemary
- to taste extra virgin olive oil
- 1/2 teaspoon salt
- 1 pinch black pepper
How to Make Baked Pumpkin
Clean the pumpkin by removing the rind, seeds, and internal fibers. Cut it into 3 parts. Using a grater with large holes, shred the pumpkin into thin strips inside a bowl. Add a pinch of salt and a pinch of pepper.
Continue by adding the grated parmesan and 5 tablespoons of breadcrumbs. Mix the mixture well with a fork. Mix the remaining breadcrumbs with the chopped rosemary in a plate. Take a handful of the mixture, compact and flatten it between your hands.
Pass the Pumpkin Cutlets into the breadcrumbs and place them side by side on a baking tray lined with parchment paper. Drizzle a little oil on top. Cook the Breaded Pumpkin in a preheated oven at 392°F in static mode for about 20 minutes.

If there is any pumpkin left, store it in a container in the fridge; you just need to heat it for a few minutes in the hot oven or microwave to make it crispy again
