Baked Spinacine — a second course that puts everyone in agreement. The recipe I want to tell you about today is a chicken recipe that is simple and delicious. I really enjoy reproducing at home the preparations we find at the supermarket, like Cordon bleu or chicken Spinacine. Certainly tastier and more genuine, they’ll make your family happy, especially the little ones. You can prepare them in advance and freeze them so they’ll be ready when needed. Just a few simple ingredients and oven baking for a lighter result, and these chicken Spinacine are also perfect to fill a delicious sandwich. To make my Spinacine I simply pressed and compacted the mixture between my hands, but if you want a more precise shape you can use a round cutter or a burger press. Ingredients for Chicken and Spinach Burgers
- 14 oz chicken breast (about 14 oz / ~400 g)
- 1 cup spinach, cooked (about 7 oz / 200 g)
- 1/3 cup grated Parmesan (about 1.4 oz / 40 g)
- 1/2 cup breadcrumbs (about 2.5 oz / 70 g)
- to taste salt
- 1/4 tsp ground nutmeg
- to taste extra virgin olive oil

How to prepare Baked Spinacine
I used frozen spinach that I simply cooked in the microwave for 6 minutes at 750 W. You can also use fresh spinach. Transfer both the cooked spinach and the chicken breast (cut into small pieces) into a food processor or blender. Blend until combined.
Transfer the mixture into a bowl. Add a pinch of salt and the nutmeg.
Continue by adding the grated Parmesan and about 1/4 cup (≈35 g / 1.25 oz) of breadcrumbs.
Mix well using just a fork. Now form the chicken and spinach burgers.
Take a portion of the mixture in your hands, compact it and flatten it to give an oval or round shape about 1/4 inch thick (approximately 7–8 mm).
As you prepare them, roll them all over in the remaining breadcrumbs. Place them on an oiled baking tray or on parchment paper.
Drizzle a little extra virgin olive oil on the surface. Bake the chicken Spinacine in a preheated oven at 356°F (180°C), conventional mode, for 18–20 minutes.
