Ingredients for Baked Stuffed Peppers
- 1.32 lbs green peppers
- 2.12 oz breadcrumbs (bread)
- 2 tbsp capers
- as needed extra virgin olive oil
- 1 clove garlic
- 1 bunch parsley
- as needed salt
How to prepare Stuffed Peppers
Clean the green peppers. Cut off the top part with the stem. Cut them in half and remove the seeds and inner filaments. Wash them now under running water, removing any remaining seeds. Drain them on a cloth. Prepare the filling. Coarsely crumble the bread crumbs in a bowl. Add a finely chopped clove of garlic, chopped parsley, and capers.
Mix well. Place the peppers in a greased baking dish with the inside facing up. Salt them inside. Transfer them to the hot oven at 375°F for 10 minutes. This way, the peppers soften and then finish cooking with the filling.
Stuff the peppers with the filling using a teaspoon. Finish with a drizzle of oil. Pour about half a glass of water on the side of the baking dish, this will facilitate cooking. Cook the Stuffed Peppers in the oven for another 16-18 minutes.
