Baked stuffed horn peppers. This morning at my trusted greengrocer’s, I found some delicious horn peppers and immediately decided they would be exquisite when stuffed. As said, so done, and today I want to tell you how I prepared the baked stuffed peppers. The name of this type of pepper is due to their elongated and sometimes curved shape. Their taste is the same as the more common peppers, and they lend themselves to a thousand and more different recipes. I simply filled them with a bread crumb stuffing just as my mom taught me, but they are also special with a minced meat stuffing. Ingredients for Stuffed Horn Peppers
- 8 horn peppers
- 160 g bread crumbs
- 2 tbsps capers
- 5 fillets anchovies in oil
- 20 ml extra virgin olive oil
- 2 cloves garlic
- 1 sprig parsley
- to taste salt
How to Prepare Baked Stuffed Horn Peppers
Clean the peppers. Cut off the top and carefully remove the seeds and filaments inside, being careful not to break them. Rinse them under running water inside as well and let them drain on a towel.
Prepare the stuffing. Break the bread crumbs into pieces in a bowl. Add the anchovy fillets in small pieces, the 2 minced garlic cloves, the chopped parsley, and the capers. Mix.
Add to the stuffing also 3-4 tablespoons of extra virgin olive oil and mix. Lightly salt the inside of the peppers. Fill them with the help of a teaspoon. As you fill them, arrange them in a baking dish next to each other.
Pour half a glass of water sideways in the baking dish. Oil the peppers on the surface. Cook the Stuffed Peppers in a preheated oven at 374°F in static mode for about 40 minutes. Check the cooking by piercing them with a fork. The pepper should be soft and well cooked.

If you prefer, you can also cook the Stuffed Peppers in an air fryer, at 374°F for 30 minutes
If there are peppers left over, store them in a container in the fridge for 2 days. You only need to heat them for a few minutes in the oven or microwave
