Baked stuffed zucchini with sausage perfect for a delicious main dish. Today, I want to tell you a recipe with my beloved zucchini. I prepared delicious and flavorful Stuffed Zucchini for a simple and wonderful main dish. For the filling, I used sausage, breadcrumbs, grated cheese, and aromatic herbs. For the zucchini, I preferred to blanch them for a few minutes in water to then have a short baking time and very tender zucchini. Ingredients for Sausage Stuffed Zucchini

  • 6 zucchini (medium)
  • 14.1 oz sausage
  • 2 1/2 oz breadcrumbs (from bread)
  • 1 3/4 oz grated Parmesan cheese
  • as needed extra virgin olive oil
  • 1 sprig parsley
  • 1 sprig marjoram
  • as needed salt
  • 1 pinch pepper

How to Prepare Stuffed Zucchini

  • Wash the zucchini. Cut them in half lengthwise. Plunge the zucchini into a saucepan with boiling water and let them cook for 6-7 minutes. Drain them and let them dry on a cloth.

  • Prepare the filling. Remove the casing from the sausage and crumble it into a bowl. Also add the crumbled breadcrumbs, chopped parsley, and marjoram. Add a pinch of salt and a pinch of pepper.

  • With the help of a teaspoon, gently scoop out the zucchini boats without damaging them. Chop the zucchini pulp and add it to the filling. Stir. Using a teaspoon, fill the zucchini boats with the filling.

  • Arrange the zucchini side by side in a greased baking dish. Drizzle a bit of extra virgin olive oil on top. Bake the Stuffed Zucchini in a preheated static oven at 374°F for 18-20 minutes.
