BAKED TROFIE AND PUMPKIN

Baked trofie and pumpkin a tasty and flavorful main dish. Pumpkin is still the star in my kitchen with a special recipe. I prepared a Baked Pasta with pumpkin using trofie as the pasta type. Ingredients for Baked Pasta with Pumpkin

  • 12 oz trofie
  • 14 oz pumpkin
  • 1.3 cups béchamel
  • 7 oz smoked cheese
  • 1.4 oz grated Parmesan
  • 1 white onion (medium)
  • as needed extra virgin olive oil
  • as needed salt

How to Prepare Baked Pasta with Pumpkin

  • Clean the pumpkin, remove the skin, seeds, and internal filaments, and cut it into small cubes. Clean the onion and dice it.

  • Pour 2-3 tablespoons of extra virgin olive oil into a skillet. Add the pumpkin and onion and a pinch of salt. Let it cook over medium heat, stirring often with a wooden spoon for 10-12 minutes.

  • While the pumpkin is cooking, also cook the trofie in plenty of salted water. Drain them al dente. Place the cooked pumpkin in a bowl and mash it simply with a fork.

  • Add the trofie to the bowl with the pumpkin cream. Mix and also add the béchamel.

  • Also add the smoked cheese in small cubes and mix well. Pour the pasta into a baking dish.

  • Top with a generous sprinkle of grated Parmesan. Cook the Trofie with pumpkin in a preheated oven at 375°F in static mode for about 20 minutes. For the last minutes of cooking, set the oven to grill for an irresistible gratin.

For a tastier and more flavorful dish, you can add 3.5 oz of speck or cooked ham in small pieces to the seasoning

If there’s leftover baked pasta, store it in a container in the fridge for 1-2 days, or you can also freeze it. You’ll just need to heat it for a few minutes in the hot oven or microwave
