Baked Zucchini Ingredients

  • 1.1 lbs zucchini
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 9 oz cherry tomatoes
  • to taste extra virgin olive oil
  • to taste salt
  • 1 sprig basil

How to prepare Baked Zucchini au Gratin

  • To prepare this recipe, I used large zucchini, but medium ones work just as well, and you might even slice them lengthwise instead of into rounds. Slice the zucchini into rounds and place them in a greased baking sheet or lined with parchment paper.

  • Lightly salt the zucchini slices. Wash the cherry tomatoes and cut them into 4 parts. In a bowl, mix the grated Parmesan cheese with the breadcrumbs. Place a spoonful of coating on each zucchini slice.

  • Distribute the cherry tomatoes in the dish, then add a drizzle of extra virgin olive oil. Bake the Zucchini au Gratin in a hot oven at 375°F for about 25 minutes. If you prefer, you can cook them in an Air Fryer at 375°F for 18-20 minutes.
