Another passion of mine is meatballs of all kinds. So today I wanted to combine these passions in a simple and special recipe: Zucchini Meatballs. A recipe that can be prepared in a few minutes, without pre-cooking the zucchini. I cooked them in the oven, but the now indispensable air fryer is also great. I simply grated the zucchini using a coarse grater and added the other ingredients. A quick breadcrumb coating and straight into the oven. Ingredients for Baked Zucchini Fritters
- 1.1 lbs zucchini
- 1 egg
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 sprig parsley
- to taste salt
- 1 pinch pepper
- to taste extra virgin olive oil
Steps
Wash the zucchini. Trim one end and shred them into thin strips using a coarse grater over a cloth. Then close the cloth and squeeze it to remove all the water contained in the zucchini.
Transfer the zucchini to a bowl. Add a pinch of salt, a pinch of pepper, an egg, grated Parmesan cheese, and chopped parsley. Mix with a fork. Add 4-5 tablespoons of breadcrumbs and mix.
With slightly oiled hands, form the meatballs. I made them slightly flattened, but you can also make them more rounded. As you prepare them, roll them in breadcrumbs on all sides.
Arrange the Zucchini Meatballs slightly apart on a baking tray lined with parchment paper. Drizzle with oil on top. Bake the meatballs in a static hot oven at 375°F for 18-20 minutes
Air fryer cooking: at 365°F for 16-18 minutes

If you prefer, you can also fry the zucchini meatballs in seed oil or cook them in a pan with a drizzle of olive oil
For tastier and more flavorful meatballs, you can add diced scamorza and/or small pieces of speck to the mixture
