Ingredients for Baked Zucchini Sticks

  • 1.32 lbs zucchini
  • 2/3 cup breadcrumbs
  • 1/2 cup grated parmesan
  • to taste extra virgin olive oil
  • to taste salt

How to Prepare Baked Zucchini Sticks

  • Wash the zucchini. Trim the ends and cut them first into 3 parts, then in half, and finally into sticks. Transfer the zucchini to a bowl and add 3 tablespoons of extra virgin olive oil. Mix with 2 spoons to coat the zucchini evenly.

  • Now add a pinch of salt, the breadcrumbs, and the grated parmesan. Mix well with 2 spoons to cover all the zucchini with the breading.

  • Transfer the zucchini to an oiled baking sheet in a thin layer. Drizzle a bit of extra virgin olive oil on top. Bake the zucchini in the preheated oven at 375°F for 20-22 minutes.

    AIR FRYER COOKING: cook the zucchini at 375°F for 18 minutes

If you have leftover zucchini, store them in a container in the fridge for 1-2 days. You just need to reheat them in the oven or microwave for a few minutes
