Ingredients for Battered Cauliflower

  • 1.76 lbs cauliflower
  • 3/4 cups flour
  • 3/4 cups water
  • 1.41 oz grated Parmesan
  • 1 tsp instant yeast for savory preparations
  • to taste salt
  • 1 1/4 cups seed oil (for frying)

How to prepare Cauliflower Fritters

  • Clean the cauliflower by removing the outer leaves and the stalk. Then divide it into small florets. Wash it under running water. Cook the cauliflower by plunging it into boiling salted water for about 10-12 minutes. I recommend testing the cooking by pricking it with a fork. Drain and let it cool.

  • Meanwhile, prepare the batter. Pour the flour into a bowl, add the instant yeast for savory cakes and the grated Parmesan.

  • Add the cold water gradually and stir with a whisk to avoid lumps. You will get a dense and fluid batter.

  • Dip the cauliflower florets in the batter and mix to cover them completely with the batter. Heat the seed oil in a small, deep pan or in a saucepan as I did.

  • With the help of 2 spoons, take a small amount of cauliflower and batter and dip it into the boiling seed oil. Let it brown well on all sides over medium/high heat.
