Blueberry cake soft and delicious. The recipe I want to tell you today is that of a very soft cake with lots of delicious blueberries in the batter. Breakfast for me is one of the most important moments of my day. To make it perfect, besides my usual and indispensable cup of milk and coffee, a homemade dessert is always the best thing! Otherwise, I have to settle for whole grain cereals or toast with jam. But if there’s a slice of soft and very soft homemade cake, I confess that the day starts off on the right foot! Today lots of sweet blueberries enrich my batter and make it special. I prepared a soft blueberry and yogurt cake super soft and special for breakfast, but also for a snack or any time of the day. It’s a great dessert on its own, but if you want to indulge and make it special, you can accompany it with custard or a scoop of vanilla ice cream. Blueberries are a source of vitamins (A, D, and E), folic acid, minerals (such as phosphorus, potassium, and magnesium), and polyphenols, and they are valuable for our health. So it’s worth consuming them often and, why not, using them also to prepare lots of dessert recipes. Let’s then run to the kitchen and prepare together a delicious Blueberry Cake

Ingredients for the Soft Fresh Blueberry Cake
- 2 eggs
- 1/2 cup cup sugar
- 3 1/2 tbsp tbsp butter (melted)
- 1 container plain yogurt (or blueberry)
- 1 1/3 cups cup flour
- 1 cup cup blueberries
- 1/2 lemon zest (untreated)
- 1/2 packet baking powder (8 grams)
- to taste powdered sugar (for decoration)
How to Prepare the Blueberry Cake
Wash the blueberries and let them drain well. Beat the 2 whole eggs with the sugar using an electric mixer for 6-7 minutes, until light and fluffy.
Add the grated zest of half an untreated lemon, melted butter, and a container of plain or blueberry yogurt. Mix.
Continue the preparation by adding sifted flour and baking powder. Mix.
Finally, add the blueberries to the batter and mix with a spatula to incorporate them into the batter.
Pour the batter into a 20 cm (8 inch) diameter cake pan greased or lined with parchment paper. Bake the Blueberry Cake in a preheated static oven at 350°F for 35-40 minutes. Always perform the toothpick test to check for doneness inside.
Let the blueberry dessert cool before transferring it to a plate and decorate as desired with powdered sugar.
