Soft and delicious blueberry waffles. For me, breakfast is the best moment of the day. A new day always brings with it many hopes and dreams to fulfill. I like to have breakfast at a leisurely pace in my kitchen and in the summer also on the balcony. Often, I settle for a cup of milk and coffee with cereal or toast and jam, but if a homemade sweet treat awaits me, needless to say, I am happier. When I have time or get up early, I like to prepare Pancakes or Waffles just like the recipe I want to share with you today. I finally dusted off my waffle iron and made the best waffles you’ve ever tasted. Waffles, also known as wafel or gaufre, are crispy on the outside and soft on the inside, typical of the Netherlands, Belgium, France, and Germany but now enjoyed worldwide. They are cooked between two hot plates, giving them a characteristic grid appearance. The batter comes together in just a few minutes and I’ve added lots of sweet blueberries. Super soft, fluffy, and delicious, I enjoyed them drizzled with honey and plenty of fresh blueberries. My indispensable cup of milk and the breakfast is served! You can also prepare the waffle batter the night before and store it in a container in the fridge, so in the morning, you just have to cook and enjoy them. Waffle Ingredients
- 1 egg
- 2 oz sugar
- 2/3 cup plain yogurt (or blueberry yogurt)
- 1 1/2 cups blueberries
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 2 tablespoons butter (to grease the waffle iron)
- to taste honey
- 3/4 cup blueberries

How to Make Blueberry and Yogurt Waffles
Wash the blueberries and let them drain on paper towels. Beat the whole egg with the sugar for 2-3 minutes until you have a light and frothy mixture. Add the plain (or blueberry) yogurt and mix.
Continue by adding the sifted flour and baking powder. Finally, add the blueberries and simply mix with a spatula to incorporate them into the batter.
Melt the butter and brush the waffle iron plates, let it heat up. Pour a ladle of batter in the center of each plate, close and let cook for 4-5 minutes. Check the cooking as the times depend on the waffle iron you are using.
Prepare all the waffles in the same way until the batter is finished. Serve them simply with powdered sugar, honey, Nutella, jam, and fresh fruit.

If you prepare the batter in advance, store it in a container in the fridge and in the morning you just have to cook your Waffles
They keep well un-topped in a container for 1-2 days. Just reheat them for a few minutes in the oven, microwave, or simply in the waffle iron
