BOREK WITH MEAT the tastiest and most flavorful Turkish savory pie

Borek with meat is a delicious savory pie.

Borek is a traditional dish of Turkish cuisine. An ancient savory pie that I discovered through Turkish TV series that are very fashionable now and are all over our TV networks, and how could I not try it? The name of this dish comes from the Turkish name bur- “to roll” which can also describe other dishes made of rolled dough. The main ingredient of the börek is yufka, an extremely thin sheet of filo pastry. The börek is prepared by filling the pastry with cheese, minced meat, spinach, other vegetables, and/or cheeses. I used filo pastry and the result was really special. A savory pie with minced meat and onions crispy and flavorful. I had already made a vegetarian version with a filling of spinach and feta, that was also good, but it depends on your taste. If you follow Turkish dramas, you surely have heard about this recipe, and if not, I recommend trying this recipe anyway. Let’s run to the kitchen and prepare the Turkish Borek with meat together.

Ingredients

  • 4 sheets filo pastry
  • 14 oz ground veal
  • 3 white onions
  • 1.4 oz grated Parmesan cheese
  • to taste extra virgin olive oil
  • to taste salt
  • 1 pinch pepper
  • 3 tablespoons milk (for brushing)
  • 2 tablespoons sesame seeds (for decoration)

How to prepare Turkish Borek with meat and onions

  • To prepare this savory pie, I used ground veal, but if you prefer, you can also use mixed meat. Pour 2-3 tablespoons of extra virgin olive oil into a pan. Add the cleaned and thinly sliced onions.

  • Let it sauté over medium heat for a minute, then add the minced meat to the pan. Season with salt and let the meat brown over medium heat for 4-5 minutes. Transfer the meat to a bowl and let cool.

  • Add a pinch of pepper and the grated cheese, then mix. Lay the filo pastry sheets gently on the work surface. Brush them with water to keep them from drying out. Distribute a strip of meat filling a few inches from the edge. Prepare all 4 sheets the same way. Roll up starting from the side with the filling.

  • Place the prepared rolls inside an oiled baking dish or lined with parchment paper. Start from the center forming a coil and continue with the other rolls always proceeding in a spiral.

  • Brush the entire surface with milk and then decorate with sesame seeds. Cook the Börek with meat in the preheated oven at 392°F (200°C) in fan mode for 18-20 minutes.

    If you prefer, instead of a single savory pie, you can make 4 single-serving spirals.
